Instant Pot Cheesecake

OK, this one is a laugh and its on me.

I have been anticipating making cheesecake in the Instant Pot. I researched, I read, I watched videos, I really prepared.

Finally, I found what I felt sounded like the bestest recipe for Instant Pot Cheesecake.

So, I purchase a spring form pan. The one I purchased is a spring form silicone pan with a glass bottom. I thought that would be better than metal since I could release the cake from the pan easier by just peeling it off.

There was only one fallback with this pan. I wanted to be able to use the trivet that came with the pot to get the pan out and I was unable to do it because the pan is just a little larger around than the trivet. However, in the end it didn’t matter because the silicone pan was not hot after cooking and I was able to just lift it out by grabbing the sides of the pan and lifting. It was actually quite easy.

This is what happened when I made this cheesecake. First, I got everything ready and I was planning on taking the cheesecake to my local bunco party. Just a little information, the ladies in my neighborhood have bunco once a month and its potluck. Well, this cake never made it to the party and neither did I because of something else at the last minute. It was a good thing, somebody was looking out for me on this one.

I got everything together and I made the most beautiful cake. It looked great and it looked delicious. In fact, I took pictures so I could post it up here.

It tasted terrible. 

My husband is so sweet. He said it was fine and ate the whole thing over the coarse of a week or so.

I’ll try again in the future and post the recipe but for now I’m back to trying to find the best cheesecake recipe I can find. I’m still posting the picture since it looks great! LOL.
